Spices are used for flavour, colour, aroma and preservation of food or beverages. Spices may be derived from many parts of the plants such as bark, buds, flowers, fruits, leaves, roots, seeds or the entire plant tops. The term ‘herb’ is used as a subset of spice and refers to plants with aromatic leaves.

Oils are liquid products of steam or water distillation of plant parts (leaves, stems, bark, seeds, fruits, roots and plant exudates)

There is a great variety of spices and oils so there is greater interest in a wide range of international and ethnic dishes that have been stimulated in recent years by extensive foreign travel, the establishment of a diverse range of ethnic restaurants, and the effects of immigration on food markets and supply chains.

Crops such as herbs, spices and essential oils provide enormous potential for generating improved incomes for rural women. Women are major but largely unrecognized contributors to agricultural and economic productivity. They grow most of the crops and participate in post-harvest activities. However, the role of rural women in vegetable production has not widely been explored. Therefore, we have made an attempt to assess the contribution of rural women in the cultivation of spices and oils.
